Success!!

This is my amazing healthy lasagna that I am super proud of!

And these are my makeshift garlic toasts that were yummy :)

That is my accomplishment for the night, succesfully making my first lasagna dinner! I made a healthy one that was super yummy, and I'm very proud of it! 
Of course you can have the recipe too, just in case you want to make this yummy thing too!! 
Pretty simple really, basic lasagna recipe with a few substitutions : 

1 package whole wheat no boil lasagna noodles

Sauce:
1 lb lean ground turkey
1 onion chopped 
1/2 a green pepper chopped
1 tsp dried italian seasonings (you can put in all your own fresh seasonings of course, I just use the mixed ones because it's quicker)
3 cloves chopped garlic
1 LG jar spaghetti sauce, I used the meat flavored one for my hubby :)

Cheese Filling:
1 (15/16 oz) container ricotta cheese
1 (16 oz) container cottage cheese
2 eggs
shredded mozzarella cheese (I didn't measure I just put a good handful spread evenly with each layer)


Brown your meat, add in onions, g pepper, garlic and let it cook until the onions are almost clear then add in italian seasonings and pasta sauce. Let simmer for 15 min.

For the Cheese filling mix the ricotta, cottage cheese, and eggs in a large bowl. 

To layer, put down a little red sauce in bottom of dish then first layer of noodles, pasta sauce and cheese filling. I topped each cheese layer with shredded mozzarella cheese, about 2 handfuls each layer.  Repeat until you end with noodles on top and then spread the remaining cheese filling on top with mozzerella covering it. bake covered at 350* for 45 min, uncover and bake an additional 5 min to brown the top. 

The toast was just butter, a bunch of chopped garlic, and Italian seasonings mixed up and spread on bread and baked for about 7 min.

I'm pretty proud of it, especially since it was a healthier version and my husband said "It's not really lasagna. Lasagna isn't supposed to be healthy, it's supposed to be good and fattening." That was before he tried it. 
After he tried it, he said it was a "make again dinner" even with the wheat pasta. Score! 

And then it dawned on me that I could make it even easier by cooking my red sauce in the crockpot during the day so it would be ready for me to layer and bake when I got home! :) Next time!
